Spicy Salmon with Coconut Rice
Place salmon fillets in a shallow baking dish.
In a small bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Stir to combine.
Brush the spice mixture over the salmon fillets.
Bake for 15 minutes, or until salmon is cooked through.
Meanwhile, in a medium saucepan, bring coconut milk and jasmine rice to a boil. Reduce heat to low and simmer for 20 minutes, stirring occasionally, until all liquid is absorbed.
Serve salmon over coconut rice and top with fresh cilantro. Enjoy!
